It’s been a while since I’ve posted a great recipe–and this one from Cooking Light is our new summer favorite. For speed, I modified the recipe at home–using a bottled light Champagne Viniagrette that I found at the grocery store. Believe it or not…I don’t always have an open bottle of white wine to mix in to salads 🙂
The salad is cool, fruity, and delicious with all of the summer ripe fruits and tart cheese with crunchy almonds on top. Serve with some grilled chicken and artisan bread it makes an easy meal.
