Tonight, I am switching gears for Meatless Monday and leaving some of my Mexican Food Craving’s behind.
I am preparing Annie Chun’s Sesame Peanut noodles–adding shredded carrots and steamed edamame. I am also planning to try the Crispy Roasted Broccoli Recipe from Postmodern Feeding. It sounds so simple to make and so delicious! On the side–some Annie Chun’s gourmet veggie egg rolls will complete our vegetarian meal with very little fuss on my part. I’m still keeping it very simple for my guys–Morgan loves peanut noodles and broccoli–Jeremy loves peanut noodles and eggrolls. Hopefully everyone’s happy 🙂
It’s still Asian food with training wheels–but I have yet to get the quality ingredients and subtle seasonings down in my attempts at VN cooking. Our area just stinks when it comes to finding VN fish sauce, fresh basil, you name it!
